REVIEW: Pasta Evangelists Tuscan Pici with Wild Boar Ragù

Another Pasta Evangelists dish to try. You have to purchase at least two dishes in the week so I repurchased the carbonara which I did a blog post for, REVIEW: Pasta Evangelists Carbonara of Dreams With Fresh Rigatoni & Pancetta, I love this dish but as I needed another dish I decided to try this one.

HOW IT COMES:

The dishes come in a big cardboard box, padded with isolation and some iced bags, each dish has a coloured dot and this dish is red.


ABOUT THE DISH: This dish is known as the unofficial mascot of Tuscany, wild boar (cinghiale), the ragù follows the time-honoured Tuscan method of gently stewing the wild boar with red wine, juniper berries and plenty of tomatoes, the pasta shape is thicker than spaghetti.


INGREDIENTS:

  • Pici (165g): Durum Wheat Flour, Water, Rice Flour

  • Wild Boar Ragù (160g): Wild Boar Shoulder (23%), Pork Shoulder (23%), Chicken Stock, Onion, Red Wine, Celery, Carrot, Olive Oil, Tomato Puree, Garlic, Salt, Black Pepper, Juniper Betties, Bay Leaf, Thyme

  • Italian Grated Cheese (8g): Milk, Salt, Rennet


HOW TO MAKE:

  1. Bring a large saucepan of generously salted water to the boil

  2. Cook the pasta in the boiling water for 4-7 minutes. Stir regularly to prevent sticking

  3. Whilst the pasta cooks, put the sauce in a large pan and add 1-2 tbsp (15-30ml) of the bailing cooking water. Gently heat until steaming. Once steaming, turn off the heat

  4. Once cooked, transfer the pasta to the sauce. Toss gently to coat

  5. Finally, plate and sprinkle with the Italian cheese. Buon appetito

I may have messed up and added too much water so it wasn't the thick sauce like in the booklet they give but and I mean a big BUT I loved it, I don't like tomatoes and this isn't a tomato-ey dish.
