REVIEW: Pasta Evangelists Rome's "Cacio e Pepe" Cheese Sauce with Pici

I wanted to try another Pasta Evangelists dish and saw cheese and had to get this, I also got repurchase Pasta Evangelists Sicily's Famous Fennel Sausage Sauce with Fresh Rigatoni which you can see a blog post I originally did here but had to repurchase because I love.



HOW IT COMES: I comes in a cardboard box with the minimum two dishes you choose plus ice bags and protective packaging, I love how the packaging is becoming more recyclable and environmentally friendly. Inside there are a few discount cards, sample of a tea Bird & Blend which is rhubarb and custard which I will be trying out on my detox that I will be doing soon. The ice packs I am using on my up and coming Yorkshire Three Peaks. This week there was a technical issue and there wasn't the recipe/nutritional card plus instructions so what I did was follow the instructions from the Sicily's Famous Fennel Sausage Sauce with Fresh Rigatoni recipe so what I have done is put it below but adapted it for this recipe, I can't say it is correct but this turned out okay. I used a discount code to get the platter of cured meat and the cocktail.


INGREDIENTS:

  • Pici (165g): Durum Wheat Semola, Wheat Flour, Egg, Rice Flour

  • Cacio e Pepe Sauce (125g):Pecorino Romano Cheese (Milk), Grana Padano Cheese (Milk, Salt, Rennet, Egg Lysozyme), Mascarpone Cheese (Milk), Black Pepper

  • Vegetarian Italian Grated Cheese (8g): Milk, Salt, Rennet (Microbial Coagulant), Egg Lysozyme


HOW TO MAKE:

  1. Bring a large saucepan of generously salted water to the boil.

  2. Cook the pasta in the boiling water for at least 3 minutes. Stir regularly to prevent sticking.

  3. Whilst the pasta cooks, put the sauce in a large pan and add 1tbsp (15ml) of the boiling cooking water. Gently heat until steaming. Once steaming, turn off the heat.

  4. Once cooked, transfer the pasta to the sauce. Toss gently to coat.

  5. Finally, plate and sprinkle with the Italian cheese. Buon appetite.

I love this dish, my favourite is still the Pasta Evangelists Sicily's Famous Fennel Sausage Sauce with Fresh Rigatoni but I definitely will be repurchasing it. Serious, how does Pasta Evangelists do it, I can't believe how amazing these dishes are.
