REVIEW: Pasta Evangelists Crab & Chilli Tortelloni With Tarragon Butter & Fennel Crumb

Pasta Evangelists has a #RallyForRestaurants Special. This week is Jemima and Lucy, founders of Wild By Tart, who came up with the “ultimate crab pasta” recipe that inspires this dish on a trip to Brixham. Pasta Evangelist have selected the very best Devonshire crab, pairing it with red chilli, finishing with a dressing of tarragon butter and a sprinkling of crushed fennel taralli.

HOW IT COMES: You may have see that I had done a REVIEW: Pasta Evangelists Carbonara of Dreams With Fresh Rigatoni & Pancetta, so this is my second Pasta Evangelists for this year and I expect there to be another few this year. The tortelloni comes in a cardboard box with a pot of crumbs and the butter in the box.


INGREDIENTS:

  • Crab & Prawn Tortelloni (200g): Durum Wheat Semolina, Wheat Flour, Liquid Pasteurised Egg, Crab Meat, Panasius, Mascarpone Cheese, Butter, White Wine, Shallots, Potato Flakes, Garlic, Salt, Parsley, Fresh Chilli Pepper, White Pepper

  • Tarragon Butter (25g): Butter, Tarragon, Salt, Black Pepper

  • Fennel Taralli Crumb (5g): What Flour, Yeast, Water, Olive Oil, Fennel Seeds, Black Pepper, Salt

  • Samphire (9g); Fresh Samphire


HOW TO MAKE:

  1. Bring a large saucepan of generously salted water to a boil.

  2. Cook the tortellini in the boiling water for 3 minutes.

  3. Whilst the pasta cooks, put the sage butter and samphire in a large pan, cover with a lid and gently heat for 1 minute until steaming. Once steaming, turn off the heat.

  4. Once cooked, transfer the tortellini to the butter. Toss gently to coat. Finally, top with the fennel tarballs crumb. Buon Appetito!

I feel so bad not giving it a full star rating and that's because I really don't like the taste of butter, my bad, probably shouldn't have picked something with butter as the sauce but I wanted to try it out, otherwise the actual pasta was delicious and next time I might just buy it again but not use the butter. I love how easy it was to cook.
