If you are a hardcore fan you will remember I did a blog post called REVIEW: Pasta Evangelists Orecchiette with Pistachio Pesto, Pistachio Crumb & Parmesan and I loved it, that was back in 2018 but thought I would try out some more of their dishes, I love carbonara and I mean LOVE IT. I got it from week 27th April - 3rd May but I have seen this dish come up ever so often.
HOW IT COMES: I purchased a couple dishes so it came in a big box, padded with isolation and some iced bags, each dish has a coloured dot and this dish is purple.
ABOUT THE DISH:
Rigantoi comes from the word rigare, meaning to score lines or mark lines into something, traditionally associated with southern and central Italy. The pasta is designed with ridges to help the pasta get a grip on the sauce.
INGREDIENTS:
Rigatoni (165g): Durum Wheat Semola, Wheat Flour, Free Range Egg, Rice Flour
Carbonara (125g): Cream, Italian Grated Cheese, Egg Yolk, Water, Black Pepper
Pancetta (35g): Pork Meat from Belgium, Water, Salt, Potassium Chloride, Glucose Syrup, Maltodextrin, Vegetable Fibres, Spices Stabiliser: E301, Acidifier: E331, Preservations: E250, Preservations: E252, Smoke Flavour, Beet Red Concentrate
Italian Grated Cheese (8g): Milk, Salt, Rennet
HOW TO MAKE:
Bring a large saucepan of generously salted water to a boil.
Cook the rigatoni in boiling water for at least 3 minutes, or until 'al dente' (check a piece before removing from the water).
Whilst the pasta cooks, pan-fry the pancetta until browned and crispy, then add carbonara sauce. Cover with a lid and gently heat until steaming. Once steaming, turn off the heat.
Once cooked, transfer the rigatoni to the sauce. Toss gently to coat.
Finally, scatter over the grated cheese. Buon appetito!
