I saw this in Waitrose and wanted to try it out, support Mindful Chef, a few years ago I was helping the primary school I went to with their fundraising and I was trying to get donations for the raffle and Mindful Chef donated a box to the school and really appreciated it.

HOW TO COOK (Microwave from frozen):
Remove sleeve and pierce film lid.
Place on a microwavable plate.
Cook on full power (900W) for 81/2 mins, (800W) 9 mins.
Allow to stand for 1 minute before serving.
HOW TO COOK (Oven cook from frozen):
Preheat oven to 220°C/fan 200°C/ gas mark 7.
Remove sleeve and pierce film lid.
Place on a baking tray in the middle of the oven and heat for 40-45 minutes.
Allow to stand for 1 minute before serving.
I love Mexican food so when I saw this I was so excited to try it, I really liked the flavours, the only thing that made it 4 out of 5 and not full marks is the large chunks of tomatoes, I HATE tomatoes. The rice was AMAZING.
