REVIEW: Mindful Chef Chilli Con Carne With Brown Rice

I saw this in Waitrose and wanted to try it out, support Mindful Chef, a few years ago I was helping the primary school I went to with their fundraising and I was trying to get donations for the raffle and Mindful Chef donated a box to the school and really appreciated it.

INGREDIENTS: Cooked Brown Rice (25%) (Water, Brown Rice, Coriander, Salt), Cherry Tomatoes (18%), Minced Beef (13%), Tomatoes, Water, Red Kidney Bean (5.4%), Onion, Red Pepper (3.1%), Yellow Pepper (3.1%), Tomato Paste, Rapeseed Oil, Tamari Soya Sauce (Water, Soya Bean, Salt, Spirit Vinegar), Garlic Puree, Coriander, Cumin Powder, Salt, Coriander Powder, Chilli Flakes, Black Pepper, Cinnamon Powder


NUTRITIONAL INFORMATION (for the meal):

  • Energy: 1,688 kJ

  • Energy: 400 kcal

  • Fat: 15.6g

  • - of which saturates: 4.8g

  • Carbohydrate: 43.2g

HOW TO COOK (Microwave from frozen):

  1. Remove sleeve and pierce film lid.

  2. Place on a microwavable plate.

  3. Cook on full power (900W) for 81/2 mins, (800W) 9 mins.

  4. Allow to stand for 1 minute before serving.


HOW TO COOK (Oven cook from frozen):

  1. Preheat oven to 220°C/fan 200°C/ gas mark 7.

  2. Remove sleeve and pierce film lid.

  3. Place on a baking tray in the middle of the oven and heat for 40-45 minutes.

  4. Allow to stand for 1 minute before serving.

I love Mexican food so when I saw this I was so excited to try it, I really liked the flavours, the only thing that made it 4 out of 5 and not full marks is the large chunks of tomatoes, I HATE tomatoes. The rice was AMAZING.
