Second meal of Gousto. Again I bought a box for four but also the ingredients to feed my family of seven (two people are away).
HOW IT COMES: I haven't got a picture but it comes in a cardboard box with a reusable ice bag plus a recipe card for each meal.
PREPARATION TIME:
20 minutes
INGREDIENTS:
500g British beef mince
200g basmati rice
60ml mayonnaise
40g chipotle paste
12 plain tortillas
2 gem lettuces
80g cheddar cheese
2 tsp smoked paprika
50g honey
2 tsp dried chilli flakes
2 tomato
2 lime
INSTRUCTIONS:
STEP 1: Add the basmati rice and 500ml cold water to a pot with a lid and bring to the boil over a high heat Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has been absorbed and the rice is cooked, then remove from the heat and keep covered until serving.
STEP 2: Preheat the oven to 220°C/ 200°C (fan)/ gas 7. Tip: This is just to warm your tortillas (alternatively, just pop them in the microwave) Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat Once hot, add the beef mince with a generous pinch of salt and cook for 3-4 min or until browned, breaking it up with a wooden spoon as you go.
STEP 3: While the mince is cooking, chop the tomato[es] finely Halve the limes. Combine the juice of 1 lime with the mayo and a drizzle of olive oil in a small bowl. Season with a pinch of salt and pepper – this is your lime mayo.
STEP 4: Once browned, add the smoked paprika and chilli flakes (can't handle the heat? Go easy!) to the beef and cook for 1 min or until fragrant Add the chopped tomato, chipotle paste (not a fan of spice? Just add a little!) and honey and cook for 3-5 min or until the tomato begins to break down and the beef becomes crispy and sticky – this is your sticky chilli beef
STEP 5: Meanwhile, add the tortillas to a baking tray and put the tray in the oven for 3-4 min or until warmed through and beginning to crisp slightly. Tip: Cooking for 4? Use 2 trays!
STEP 6: Wash and shred the gem lettuce finely, then pat it dry with kitchen paper. Grate the cheddar cheese.
STEP 7: Cut the remaining lime into wedges. Fluff the cooked rice with a fork and season with a pinch of salt Build your own burritos by layering up a warmed tortilla with some basmati rice, a handful of shredded lettuce and a dollop of the sticky chilli beef. Sprinkle over some grated cheese and a drizzle of lime mayo, then roll your burritos up tightly. Garnish with a lime wedge. Enjoy!
I wish there was a hint of spice in this dish but otherwise it was tasty and another recipe I will be keeping to make over and over again.
