REVIEW: Gousto Lamb Tortilla Samosas With Mango Mayo

I fancied trying a few new dishes and I feel the best way to do so is to go on Gousto and order a few meals.

HOW IT COMES: It comes in a cardboard box with ice packs, all the dry products come in their very own paper bag. This month I got two free gifts, the recipe card folder and also the Aperol gift box. Also how cute is the box for the egg that I got for another recipe.


PREPARATION TIME:

INGREDIENTS:

  • 6 plain tortillas

  • 250g British lamb mince

  • 1 tsp ground cumin

  • 1 tbsp curry powder

  • 1 carrot

  • 1 shallot

  • 20g mango chutney

  • 50g baby leaf salad

  • 30ml mayonnaise

  • 15ml cider vinegar

  • 1 tsp nigella seeds

  • 1 garlic clove


INGREDIENTS (you need to have):

  • Flour

  • Olive oil

  • Pepper

  • Salt

  • Sugar

  • Vegetable oil (I used olive oil)

When I made this dish I was making food for the whole family, I did a bit of a buffet.


INSTRUCTIONS:

STEP 1: Preheat the oven to 220°C/ 200°C (fan)/ gas 7. Peel and finely dice the shallot. Top, tail, peel and grate the carrot. Peel and finely chop (or grate) the garlic.

STEP 2: Heat a large wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat. Once hot, add the diced shallot and grated carrot with a pinch of salt and cook for 2-3 min or until the shallot is starting to soften. Once starting soften, add the lamb mince to the vegetables and cook for 5 min or until browned, breaking it up with a wooden spoon as you go.

STEP 3: Once the lamb is browned, add the chopped garlic, ground cumin, curry powder and a generous pinch of salt and cook for 2-3 min further or until fragrant – this is your spiced lamb filling. Meanwhile, combine 2 tbsp flour with 2 tbsp water in a small bowl to form a thick paste – this is your flour paste.

STEP 4: Add a tortilla to a clean board and using your finger, rub some of the flour paste along the edge of one quarter of the tortilla. Fold the tortilla in half and press firmly to seal the bottom half, leaving an opening at the top. Tip: This will make filling your tortillas easier!Repeat this with the remaining tortillas – these are your samosa shells.


STEP 5: Stuff the samosa shells with the spiced lamb filling. Use the remaining flour paste to seal the top half of the samosa shells – these are your lamb tortilla samosas. Tip: Press firmly on the edges to make sure there are no gaps!

STEP 6: Add the lamb tortilla samosas to a baking tray (or 2!) and brush them on both sides with a little olive oil until evenly coated. Put the tray into the oven for 8-10 min or until golden and crisp.

STEP 7: While the samosas are in the oven, add the cider vinegar to a small bowl with 2 tbsp olive oil and a pinch of salt, sugar and pepper and whisk with a fork – this is your dressing. Wash the baby leaf salad, then pat it dry with kitchen paper. Combine the mayo, nigella seeds and mango chutney in a small bowl – this is your mango mayo. Chop the lamb samosas in half and serve with the baby leaf salad and mango mayo to the side. Drizzle the dressing over the baby leaf salad. Enjoy!

I am not a big Indian food fan but these tasted really good, wasn't keen on the mayo but I think that's because I don't like mango as a fruit, like juiced but not in a mayo. I will be making these for other buffets I will do.
