I have never had risotto so thought I would try it for the first time. This meal is for two people.
HOW IT COMES: It comes in a cardboard box with ice packs, all the dry products come in their very own paper bag.
PREPARATION TIME:
30 minutes
INGREDIENTS:
35g grated Italian hard cheese
100g British bacon lardons
160g arborio rice
11g vegetable stock mix
160g chestnut mushrooms
15ml Chinese rice wine
5g parsley
1 garlic clove
1 brown onion
INSTRUCTIONS:
STEP 1: Boil a kettle. Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat. Once hot, add the bacon lardons and cook for 6-7 min or until golden and crispy. Once crispy, transfer the bacon to a plate and reserve the pan (and oil!) for later.
STEP 2: Meanwhile, peel and finely chop the brown onion. Peel and finely chop (or grate) the garlic. Chop the chestnut mushrooms roughly.

STEP 3: Return the reserved pan and oil to a medium heat. Add the chopped onion, garlic and mushrooms with a generous grind of black pepper and cook for 4-5 min or until softened.
STEP 4: Meanwhile, dissolve the vegetable stock mix in 700ml boiled water.

STEP 5: Once the veg has softened, add the arborio rice and Chinese rice wine and cook for 1 min or until the Chinese rice wine has evaporated.
STEP 6: Add the vegetable stock to the pan and cook for 25-30 min, stirring frequently, or until the rice is cooked with a slight bite – this is your mushroom risotto. Tip: Add in the liquid all at once for ease, but don't forget to stir to release the starches in the rice!
STEP 7: While the risotto is cooking, chop the parsley finely, including the stalks. Once done, stir half of the grated Italian hard cheese (save the rest for garnish!) through the mushroom risotto and season with a generous grind of black pepper. Tip: Add a splash of water if the risotto is looking a little dry! Serve the mushroom risotto with the crispy bacon, remaining grated Italian hard cheese and chopped parsley over the top. Season with a generous grind of black pepper. Enjoy!
I really like the taste of this, I have never had risotto and really loved how this tasted, I am going to definitely make this dish multiple times.
