RECIPE: The Best Cheat Dirty Fries EVER

A couple of years ago I used to buy this ready made dirty fries from the Coop but they stopped doing them so thought I would try and make them myself and make them a lot better myself so thought I would share the recipe with you. These are not diet friendly just to let you know


Ingredients

  • 750g skin on fries (frozen)

  • 160g diced smoked pancetta

  • 3 spring onions

  • 3 fresh chillies (if you like spice add more)

  • 350g cheese sauce (pasta fridge section)

  • 550g extra mature cheese


Method

Step 1: Put the fries into an oven proof dish (I forgot to get skin on fries, let's just pretend) and put it into the oven on 200°C.

Step 2: The pancetta normally comes in two packet, put one packet into a bowl and microwave for 1.5 minutes.

Step 3: Whilst that is cooking start grating your cheese, you can busy already grated cheese.

Step 4: Slice up your chillies, the day I was cooking these I was also doing some other dishes that we needed chillies for, if my brother wasn't having this dish I would have added a lot more chilli but he doesn't deal well with spice.

Step 5: The microwave has probably beeped at you so I know this isn't healthy but poor the fat onto the chips and give it a little shake.

Step 6: Add the other packet of pancetta into another bowl and into the microwave for 1.5 minutes.

Step 7: Slice the spring onions and add it to the chilli bowl.

Step 8: Microwave has beeped again and do exactly the same as last time and pour the fat onto the fries.

Step 9: Pour some of the cheese sauce onto the fries, some of the pancetta and the spring onion, chilli mix as well as some of the grated cheese and mix it all together.


Step 10: Put the fries back into the oven for another 5 minutes.

Step 11: Top the chips off again with pancetta, cheese sauce, spring onions, chillies and grated cheese, mix then in the oven for another 5 minutes.

Step 12: Repeat step 11.

Step 13: Repeat step 12 but once you have mixed it top it off with a sprinkling of cheese and then in the oven.

Step 14: Take them out once they are golden with a crispy top.
