RECIPE: Jamaican Chicken Curry #GuestBlogger (@themumofseven)

My cousin's daughter is my goddaughter and her dad is Jamaican and at her christening I tried Jamaican curry and just fell in love with it so me and Mum have perfected our own recipe and I wanted to share it with you. Mum does things I don't do and I will put it into the blog post so you can try that and I do things she doesn't do so this is kind of two recipes in one. My goddaughter's grandmother did traditional Jamaican curry which wasn't chicken but I have adapted it.


Serves 6


Ingredients

  • 900g boneless skinless chicken thighs

  • 2½ tbsp Dunn's River Mild Curry Powder

  • ½ tbsp Dunn's River All Purpose Seasoning

  • 1 clove of garlic

  • Olive oil

  • 1 onion (either red or white)

  • ½ tsp cumin seeds

  • 1 bell pepper (any colour)

  • ½ tsp dried thyme

  • ½ tbsp tomato puree

  • 2 scotch bonnets This is an Alicia's version

  • 750g Baby Potatoes This is Mum's version


Method

Step 1: Cut up the chicken into small bite size pieces and put it into a zip lock bag


Step 2: Add a table spoon of the curry powder to the chicken

Step 3: Add half a table spoon of the all purpose seasoning to the chicken

Step 4: Cut up a clove of garlic and add that to the chicken

Step 5: Shake the bag about to mix it together. I leave it in the fridge over night so it can properly marinate

Step 6: Heat a dash of olive oil in a pan

Step 7: Cut up an onion into small bits

Step 8: Add half a teaspoon of cumin seed to the hot oil

Step 9: Add the onion to the pan too

Step 10: Cut up into small pieces a bell pepper

Step 11: Add the peppers to the pan


Step 12: Add half a teaspoon of dried thyme to the pan

Step 13: Add one and a half tablespoon of curry powder into the pan and mix

Step 14: Add half a tablespoon of tomato puree to the mix

Step 15: Add a dash of hot water to thicken it up to make more of a paste sort of consistency

Step 16: Add half a cup of boiling water and add the chicken

Step 17: Add another cup of boiling water and let it cook through for about ten minutes

Step 18: Now I add two scotch bonnets whole to the curry, Mum doesn't do this because when she is cooking she is cooking for the family and not everybody loves spice in my family but as this is my batch I add it and let it cook for another twenty minutes

Step 19: After the twenty minutes mum would add the potatoes but I don't add them. I take the scotch bonnets out and cut them up into small bits and put it into the pot and cook for another ten to twenty minutes or until the chicken is cooked through

Step 20: Ready to eat, I serve it with rice and peas (beans), I would give you that recipe but I don't know how to cook rice, mum does it for me every time.


NOTE: I know I have mentioned a brand called Dunn's River, that is what my goddaughter's grandmother suggested and that is what we use however I do know that Aldi has a version of it so maybe try that if you can't get your hands on Dunn's River.
