RECIPE: Cherry & Almond Muffin

Two flavours that go so well together: cherry and almond.


Serves 6


Ingredients

  • 125g butter

  • 100g brown sugar

  • 75g ground almond

  • 100g self raising flour

  • 2 eggs

  • 1tsp almond extract

  • 100g black cherry jam

  • 50g flaked almond


Method

Step 1: Preheat the oven to 180°C

Step 2: Cream the butter and sugar together

Step 3: Add the ground almond and flour to the mixture and mix together

Step 4: Beat the eggs together and add to the mixture and mix it together with the almond extract

Step 5: Spoon the mixture into muffin tins lined with paper case

Step 6: Add a dollop of cherry jam into each muffin case and then swirl it around so it's marbled looking

Step 7: Sprinkle some almond flakes onto the top

Step 8: Put muffin cases in the muffin tins and add the mixture into the cases, two thirds of the case to be filled and cooked for 20 to 25 minutes
